The Ungourmet is an Apron Goddess!

This is Apron Goddess Kim at the UnGourmet! She is really a cooking genius in disguise as a Mom. Now wait!!! That's an oxymoron if I ever heard one. All moms are cooking geniuses right? Well, I still think Kim is a step above the rest. OK, she is SEVERAL steps above me and many other cooking moms. :)

Wearing her red hot pepper apron and manning the grill Kim escalates from Apron Goddess to BBQ Goddess status. She makes great recipes and shares them on her blog site for the world to use. I always lament that when I visit her site because it is usually 9 or 10 at night. And dinner was soooo long ago. And then I see her yummy looking food. And I just want to eat another whole entire meal! And we know what a sucker I am for cupcakes... Don't get me started on real food.


I like Kim's recipes not only because they look good and make me hungry but they are simple in preparation with common ingredients that are not hard to find at the store!

I asked which BBQ recipe she'd like to share for today and this is IT!



Kim said, "I know it's the weekend to do a little grilling but I just wasn't in the mood for a burger or a hot dog so I decided to grill up a little spaghetti instead."



Here is what went into my spaghetti:
  • 1 lb lean ground beef
  • 4 slices turkey bacon
  • 1 can fire roasted tomatoes with garlic
  • 1 can corn, drained
  • 1 red bell pepper
  • 1 cup sliced mushrooms
  • 1/2 cup shredded sharp cheddar
  • 1 tsp chopped fresh spicy basil
  • 2 tbsp Worcestershire
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked pepper
  • Tabasco to taste
  • 8 oz spaghetti, cooked al dente


Blacken your bell pepper on the grill for about 10 minutes, turning occasionally. Remove from grill and dice. Set aside. (I stole a little slice off the pepper. Shhhh!)



Cook the bacon on the grill in a bit of olive oil until crisp. Drain on a paper towel.



Brown your ground beef. Add the salt, pepper and 1 tbsp of the
Worcestershire.



Remove the beef and add the corn. Cook until lightly browned.




Add the mushrooms and cook for about 5 minutes, stirring occasionally.



Add in the roasted pepper. Cook again for 5 minutes.



Next, add in the beef, bacon, 1 more tbsp of Worcestershire, and Tabasco. Cook for about 10 more minutes.



Serve on a bed of spaghetti. Top with a little sharp cheddar and fresh spicy basil. This spaghetti is just bursting with smoky, fire-roasted goodness!

Thanks so much KIM!!! Now I am hungry once again. This is a very bad habit of mine. Blogging at night that is... I guess I will eat a carrot.

Well that just looks fabulous. I agree with you, Julia, about the late night visits to Kim's site - dinner always seems like a distant memory when you're looking at one of her recipes.

I could not sleep so I have been awake since 4:30! Boy do need coffee.

This just put a smile on my tired face! Thanks so much for featuring me today.

That apron was actually about 6 inches longer when I bought it. I cut it off and hemmed it back up. It's a much better length for me now but my daughter says it looks like a little kids apron. Oh well! :0)
