Stir and bring to a boil; then reduce heat and simmer for 10 min. Prepare canning jars as usual. Then ladle salsa into hot jars. Process in a boiling water canner for 15 min. (covering the tops of jars with approximately 1" of water. Yields 3 pints. I double the recipe to can more at a time.<br /><br />So far I have canned about 7 pints and 10 1/2 pints. It is not at all hot, so if you want hot you will need to add some sort of hot pepper either before or after the processing. The papery part that wraps around the green fruit is the calyx left over from the flower parts. The calyx is the green stuff that wraps around the flowers before they bloom.<br /><br />Ripe tomatillos will keep in the refrigerator for about two weeks. They will keep even longer if the husks are removed and the fruits are placed in sealed plastic bags stored in the refrigerator.<br /><br />However, these tomatillos were destined for another fate. I really never measure making salsa. It's an organic, loose process where I throw together what makes sense. But if you need quantities here's what you can start with:<br /><br />- The equivalent of three to four cups of tomatillos. Depending on fruit size the total number of tomatillos will vary.<br />- Large handful of cillantro. Wash and chop or cut up in food processor.<br />- Three cloves garlic - roasted.<br />- One large onion - roasted.<br />- Two or three jalepeno peppers. Deseed peppers and roast. Chop onions, garlic, peppers, and cilantro in food processor. Add roasted tomatillos. Whirl around until combined! Add salt and pepper to taste! And VOILA! Line 2 baking sheets with parchment paper.<br />*Sift together flour, baking powder, and salt onto a sheet of waxed paper (I skipped this step)<br />*In the work bowl of a stand mixer fitted with the paddle attachment, beat together butter, shortening, and both sugars and beat until light and creamy, about 3 minutes. Add the eggs and the buttermilk and beat until combined.<br />*In a measuring cup, combine the milk, baking soda, and vinegar. Add the milk mixture to the batter along with the flour mixture and beat on low until just combined. Add the vanilla and beat on medium for about 2 minutes, until completely combined.<br />*Using wooden spoon, stir in chocolate chips until incorporated.<br />*Using a spoon, drop about 1 tbs. of batter onto one of the prepared baking sheets and repeat, spacing them at least 2 inches apart. Bake one sheet at a time for about 10 minutes each, or until the cakes begin to brown. Remove from oven an dlet the cakes cool on the sheet for at least 5 minutes before transferring them to a rack to cool completely.<br /><br />Makes about 48 2-inch cakes.<br /><br />Classic Marshmallow Filling:<br /><br />1 1/2 c. Marshmallow Fluff<br />1 1/4 c. vegetable shortening<br />1 c. confectioners' sugar<br />1 tbs. vanilla extract<br /><br />*In the work bowl of a stand mixer fitted with the paddle attachment, beat together the Marshmallow Fluff and the vegetable shortening, starting on low and increase to medium speed until the mixture is smooth and fluffy, about 3 minutes. Reduce mixer speed to low, add the confectioners' sugar and the vanilla, beat until incorporated. Increase mixer speed to medium and beat until fluffy, about 3 minutes more.<br /><br />Personally? I wasn't too thrilled with the Marshmallow Fluff center. It was fine the first day when it set, but the next day? Not so great. I typically dress hotcakes in Agave Nectar, but decided to try out the Raw Orange Blossom Honey. It tasted quite good, complemented the other flavors in the hotcakes. I could taste a hint of the orange trees the bees raided their pollen from. The taste of this one resembles the taste of honey purchased in the grocery stores.<br /><br />I figured if the Orange Blossom tasted that good then the Apple Blossom must taste just as good. I did what any person who loves honey does....I grabbed a spoon and dipped it right in. The Apple Blossom Honey has a drier taste to it, but I could taste a bit of the apples it was derived from. I am imagining what I might enjoy it with....a cup of tea, an English muffin, cornbread, added to salad dressing and the list goes on. I made quite a mess, but I persevered. And I think Wyatt loved his cupcakes. Combine flour, 1/2 c. sugar, oats, baking powder, baking soda, and salt in a large bowl. In another bowl, whisk buttermilk, egg, oil, and vanilla. Toss blueberries with flour mixture and stir gently. Line a 12 count muffin pan with paper liners (or spray with nonstick cooking spray). Divide batter evenly; sprinkle with remaining sugar. Bake 12-15 minutes or until tops are set. Remove from oven; top each muffin with 1 tsp. fruit spread and 2 blueberries. Bake 3-5 minutes more or until golden. I just love making scones. They're easy and versatile and make for a warm, inviting breakfast. Add a little fruit and a piping hot cup of coffee or tea and you're good to go. I found a recipe I liked at Joy of Baking. I made a few changes to the original recipe, working with what I had on hand. These are so moist and delicious! I know you'll love 'em too!<br /><br /> <br /><span style="font-weight: bold;">Chocolate Chip Raisin Scones</span><br /><span style="font-size:85%;"><span style="font-style: italic;">inspired by Joy of Baking</span></span><br /><br />2 cups all purpose flour<br />1/4 cup sugar<br />1 1/4 tsp baking powder<br />1/4 baking soda<br />1/4 tsp salt<br />1/2 tsp ground cinnamon<br />1/2 cup cold butter, cut into pieces<br />1/2 cup chocolate chips<br />1/2 cup raisins<br />1/4 cup chopped walnuts<br />1 tsp vanilla extract<br />2/3 cup reduced fat buttermilk<br />eggwash, 1 egg yolk mixed with 1 tsp water<br />raw coarse sugar for sprinkling<br /><br />Preheat oven to 400 degrees. Line a baking sheet with parchment paper.<br /><br />In a large bowl, whisk together the flour, baking powder, baking soda, salt and cinnamon. Cut in the butter. Mixture should resemble coarse crumbs. Stir in the chocolate chips, raisins and walnuts. In a small bowl, whisk together the vanilla and buttermilk and add to the flour mixture. Stir just until combined. Turn out onto a well floured board. Knead four or five times. Hand flatten to 1 1/2 inch thickness. Using a floured glass cut out 8 scones. Place onto baking sheet. Brush lightly with egg wash. Sprinkle with sugar. Bake for 15-20 minutes until golden brown.
